Gluten-Free Chocolate Chip Blondies

These blondies are so addictive and so decadent and so delicious. People ask me for the recipe all the time.

Ingredients

¼ c. softened butter

¾ c. almond butter

2 eggs

¼ c. maple syrup

1 tsp. vanilla

¾ c. quinoa flour

1 tsp. baking powder

¼ tsp. salt

1 c. dark chocolate chips (bittersweet)

Optional: ½ c. walnut pieces

Directions

Combine the wet ingredients and blend well. Combine the dry ingredients except the chocolate chips. Put the dry ingredients into the wet ingredients and stir until smooth and all the butter is blended in. Add the chocolate chips and stir well.

Put the batter in an eight-inch square baking dish lined with parchment paper for easy removal. Bake at 350º for 25-35 minutes or until a knife comes out clean. Allow to cool for 45 minutes then lift the parchment paper out and cut into squares.
